Healthy Recipes: Sweet Potato with Vegetables and Salmon

The sweet potato is a staple food in many tropical countries. Only when cooked or baked does the sweet potato develop its sweet taste – the warmer the weather was when the tuber was growing, the sweeter it tastes. The sweet tuber has many positive properties. It is rich in vitamin C and E, as well as beta-carotene – which protects cells and strengthens the immune system. Originally, the sweet potato comes from Central and South America. The Spaniards brought them to Europe in the 16th century. The healthy tuber tends to thrive in tropical and subtropical climates. Today, it is cultivated in Europe in Italy, Portugal and Spain.

Sweet potatoes are not only extremely healthy, but also very versatile. Baked, mashed or fried – it is guaranteed never boring in the kitchen with the sweet tuber! We show you with our recipe how you can prepare a very tasty and healthy main dish with sweet potato with little effort.

Ingredients for Sweet Potato with Vegetables and Salmon

  • 2 medium-sized sweet potatoes
  • 2 pieces of salmon (with or without skin)
  • 1 cauliflower
  • 1 broccoli
  • 250 g mushrooms
  • 2 red onions
  • 3 cloves of garlic
  • coconut oil
  • sea salt
  • pepper
  • oregano

Preparation of Sweet Potato with Vegetables and Salmon

Step 1
Peel the sweet potatoes and cut them into bite-sized pieces, as well as the cauliflower and broccoli – spread all the vegetables on a baking sheet and put it in the oven for 20 minutes at 180 degrees.

Step 2
Prepare the salmon in a pan as you like – in our recipe we seasoned it with sea salt, pepper and oregano. If you are preparing salmon with the skin on, sear the skin side first so that it becomes crispy.

Step 3
Chop the onions and fry them together with the pressed garlic in a little coconut oil in a large pan or wok.

Step 4
Halve or quarter the mushrooms and add to the onions and garlic after steaming. Season everything with a pinch of sea salt and pepper.

Step 5
Serve the finished oven vegetables with the mushrooms and salmon on plates and enjoy.

Tip:
Instead of salmon fillet, you can also use a plaice fillet or another fish of your choice for the dish.
